Cucumber & Pear Salad with Cranberries and Pumpkin Seeds

Serves 3–4

Ingredients

  • 1 English cucumber, halved lengthwise and thinly sliced

  • 2 ripe pears, sliced into thin wedges

  • 2 Tbsp dried cranberries (unsweetened or lightly sweetened)

  • 2 Tbsp toasted pumpkin seeds (pepitas)

  • 2 Tbsp fresh mint, chopped

Dressing

  • 2 Tbsp extra-virgin olive oil

  • 1 Tbsp fresh lemon juice

  • 1 tsp honey or maple syrup

  • Pinch of sea salt and cracked black pepper

Instructions

  1. Combine cucumber, pears, cranberries, pumpkin seeds, and mint in a bowl.

  2. Whisk together dressing ingredients until smooth.

  3. Drizzle over the salad and toss gently.

  4. Serve immediately, or chill briefly for extra crispness.
