Passion Fruit Dark Chocolate Mousse

Ingredients:

  • 2 ripe passion fruits (about ½ cup pulp)
  • 3 oz dark chocolate (70% cocoa), chopped
  • 1 cup almond milk (unsweetened)
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • Whipped coconut cream and passion fruit seeds for garnish

Instructions:

  1. Scoop the pulp from the passion fruits into a small bowl and set aside.
  2. In a saucepan over low heat, combine almond milk, honey, vanilla, and a pinch of sea salt. Stir until warm but not boiling.
  3. Remove from heat, add chopped chocolate, and whisk until smooth. Allow to cool slightly.
  4. Stir in the passion fruit pulp and pour the mixture into serving glasses.
  5. Refrigerate for at least 2 hours to set.
  6. Top with whipped coconut cream and fresh passion fruit seeds before serving.
