Classic Mother Sauces Cooking Lesson 

This class is great for the more adventurous cook. Learn about the mother sauces and how they can be used in everyday cooking situations. The sauces taught in this lesson include the Béchamel, Veloute, Brown, Tomato Sauce, and Hollandaise.

In the classic kitchen brigade, there is a position called “Saucier” which is a more seasoned post. You need to have many years’ experience to truly be a classic saucier. I held this position at a variety of venues including Royal Sydney Golf Club and the five-star InterContinental Hotel Sydney.  

Southeast Asian Cooking Class  

A hands-on class with a recipe package, Chef Ken lived in Hong Kong and traveled the region extensively. Fresh, robust, and spicy flavors come through with the use of ginger, garlic, chilies, and herbs, the origins of these recipes are inspired by the culinary delights of Thailand. Chef Ken will share the stories of his Asian travels along with cooking tips and techniques that will help you to become a better cook.  The dishes taught in this lesson include tom kha ghi, Thai beef salad, and pad thai.

The 5Cs of a Dessert Menu

A hands-on class with a recipe package, the Five Cs is a guideline of keeping in mind different flavor profiles to build a menu by. They consist of chocolate, citrus, coffee, cheese, and caramel. If you can find a way to incorporate these items, you’ll be on your way to creating a delightful dessert menu.

Here we’ll have fun making classical desserts, with narratives along the way. You’ll also learn about plate presentation and techniques on how to construct beautiful, appealing, and captivating desserts.  The desserts include crepe Suzette flambe, molten chocolate cake, and a glazed rustic fruit tart with caramel sauce.
