First, I want to thank you for being part of this incredible community. CKC has always been about more than just cooking—it’s about growth, connection, and making a difference. Whether in the kitchen or in life, I believe we all thrive when we come together to support one another.
My passion for helping others, especially seniors, was ingrained in me from a young age. When I was a teenager, my Grampa George, my mother’s father, lived with us. He was a quiet but strong presence in our home, and I was often responsible for helping him shave, preparing his meals, and accompanying him to church. These weren’t just tasks—they were moments of connection, where I learned patience, respect, and the importance of showing up for those who once took care of us.
Years later, after traveling and living around the world, I found myself in Sydney, Australia. There, I volunteered with Meals on Wheels, a program dedicated to delivering hot meals to seniors in need. I wasn’t the driver—my job was the “runner.” I’d hop out of the van, knock hard on the door, and call out, “MEALS ON WHEELS!” before hearing the slow shuffle of a walker approaching. Sometimes, there was no response, and I’d quietly step inside, leaving the meal on a bedside table, taking a moment to check in and make sure they were okay. These simple interactions left a lasting impression on me, reminding me how vital food is—not just for nourishment, but as a form of dignity, care, and connection.
That’s why I wrote my latest book, The Ultimate Senior Meal Prep Cookbook Made Easy. It’s my way of continuing to contribute, to offer solutions that make healthy eating simple and accessible for seniors, whether they’re cooking for themselves or being cared for by loved ones.
Beyond that, I’m always looking for ways to expand my knowledge and serve my clients better. Every two years, I renew my Nutrition and Wellness Certification, which requires 16 study credits from the American Fitness Professionals & Associates (AFPA). While researching my next course, I discovered the Senior Nutrition Specialist program—a perfect fit for my mission. So, in my spare time (what little of it there is these days!), I’ve been diving into research, taking notes, and completing coursework. In just a couple of months, I’ll have this new credential under my belt, further equipping me to guide seniors toward better nutrition and wellness.
Right now, my schedule is packed with personal chef clients who rely on me for meal prep, but once I complete my studies, I look forward to writing even more books and resources that can help seniors here at home and beyond. This journey—one that started with Grampa George all those years ago—continues to shape my path, and I’m grateful for the opportunity to keep making an impact.
